A make-ahead, gluten-free meal that’s adaptable to tastes and always a crowd pleaser. As is, it’s vegetarian (actually, vegan) but add grilled chicken for the non-vegetarian in your family. This wholesome meal is full of proteins bursting with flavours.

Tips

  • The bellpeppers should be julienne cut to get better texture and great taste post grilling.
  • Adding Indian Chaat Masala gives tangy, sour flavour to the recipe.
  • Using black,red and pinto beans increase protein content of the recipe.
  • Burrito bowls goes best with tacos & wraps. Tortillas Chips & Nachos can be used as a side dish with guacamole and salsa.

Veg Fajitas Preparation

     
Olive oil   1 tsp
Onion julienne cut   Half (1/2) cup
Yellow Bellpepper julienne cut   Half (1/2) cup
Red Bellpepper julienne cut   Half (1/2) cup
Orange Bellpepper julienne cut   Half (1/2) cup
Green Bellpepper julienne cut   Half (1/2) cup
Salt   1 tsp
Chaat Masala   1 tsp or to taste
Black pepper   1 tsp or to taste
Taco Masala   1 tsp or to taste
Lemon Juice   1 tbsp or to taste
Coriander   to taste

Beans Preparation

     
Red Beans   1 cup
Pinto Beans   1 cup
Black Beans   1 cup
Salt   1 tsp
Chaat Masala   1 tsp or to taste
Taco Seasoning   1 tsp or to taste
Lemon Juice   2 tbsp or to taste

Rice Preparation

     
Boiled Rice   1 cup
Coriander   2 tbsp
Lemon Juice   2 tsp
Salt   1 tsp
Chaat Masala   1 tsp or to taste
Taco Masala   1 tsp or to taste
Lemon Juice   2 tbsp or to taste
Coriander   2 tbsp

Burrito Bowl Preparation

  • Rice
  • Beans
  • Veg Fajitas
  • Guacamole
  • Salsa
  • Sour Cream

Condiments

  • Burrito Wraps
  • Tortillas Chips
  • Nachos

Instructions

  • Step 1 : Veg Fajitas
    • Add olive oil to the pan along with julienne cut bellpeppers & onions. Saute for 2 minutes.
    • Add salt, chaat masala, taco seasoning and lemon juice to taste.
    • The vegetables gives a grilled texture to the recipe.
  • Step 2 : Beans
    • Boil the black, red and pinto beans and place in mixing bowl.
    • Add salt, chaat masala, taco seasoning and lemon juice to taste.
    • The beans are ready to serve.
  • Step 3 : Rice
    • Boil the rice until it turns soft.
    • Add coriander, salt, chaat masala, taco seasoning and lemon juice to taste.
    • Rice is ready to searve.
  • Step 4 : Burrito Bowl
    • Spread the rice at the bottom of the serving bowl.
    • Add black, red and pinto beans.
    • Add vegetables fajitas.
    • Add scope of sour cream.
    • Add guacamole to taste.
    • Add salsa to taste.
